Making Crispy Jiangmi Noodles
Jiangmi noodles are a popular Chinese snack that are crispy, sweet and salty. They are made from rice flour and are usually deep-fried to make them crispy. In this article, we will show you how to make crispy jiangmi noodles at home.
Ingredients
- 1 cup rice flour
- 1/2 cup warm water
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil
- Oil for deep-frying
- Sesame seeds for garnish (optional)
Method
Follow these steps to make crispy jiangmi noodles:
- Mix the rice flour, warm water, salt and vegetable oil together until it forms a smooth dough.
- Divide the dough into small pieces and roll each one into a thin noodle shape. You can use a pasta machine to make it easier, or a rolling pin and a knife.
- Heat the oil in a wok or a deep-fryer until it reaches about 180°C (350°F).
- Add the noodles to the oil, in small batches, and fry them until they are golden brown and crispy. This should take about 2-3 minutes. Be careful not to overcrowd the wok or the temperature of the oil will drop and the noodles will not be crispy.
- Use a slotted spoon to remove the noodles from the oil and drain them on paper towels to remove any excess oil.
- Sprinkle sesame seeds over the noodles for extra flavour (optional).
Tips
Here are some tips to help you make the best crispy jiangmi noodles:
- The dough should be firm enough to roll into noodles, but not so dry that it is difficult to work with. Add more water if necessary.
- Roll the dough as thinly as possible to ensure crispy noodles.
- To test if the oil is hot enough, drop a small piece of dough into the oil. If the oil bubbles and sizzles around it, then it is ready.
- Do not leave the noodles unattended while frying them. They can quickly burn and ruin the entire batch.
- Store the leftover noodles in an airtight container or a zip-lock bag to keep them crispy for longer.
